2018年9月，NUOVO·汇餐厅正式替代原Unique Italia餐厅，是作为主创团队对餐厅品质上的全面升级与更新。有别于原餐厅的定位，NUOVO·汇餐厅将为食客提供淡化高级西餐繁琐仪式感，轻松、分享和‘餐有所值’才是这里的主旨。在798艺术区内，独栋空间的NUOVO·汇餐厅，着眼于欧陆法餐，力邀原TRB主厨参与菜品的研发和创作，为每位食客提供具有品质的食材和美味的佳肴，赋予就餐新的体验和感受，也为食客提供多样化的就餐环境和服务。

NUOVO来自意大利语，意为‘新的，全新’，即为全新，是原Unique Italia的主创团队对于餐厅的一次革新和升级。餐厅力邀原TRB主厨加入，由原先的意大利餐，开拓为欧陆法餐。

欧洲因其具有优越的地理位置和多样的气候环境，同时各地又具有独有的饮食文化和优质的食材，而形成口味层次鲜明的各类佳肴。因此欧陆餐即为欧洲各地菜系的集合，其淳朴的烹饪技巧，还原了食材本质的味道和香气，再加上NUOVO主厨对食材品质的考究和恰到好处的搭配，造就了餐厅在菜品上的全面升级。也因此有了餐厅名称中‘汇’的由来。

In September 2018, NUOVO·Hui Restaurant officially replaced the original Unique Italia restaurant, which is a complete upgrade and update of the quality of the restaurant as the main creative team. Different from the positioning of the original restaurant, NUOVO·Hui restaurant will provide diners with a sense of tedious rituals of high-grade western food. It is the main purpose of this, easy to share and ‘meal value.’ In the 798 Art District, the NUOVO·Hui restaurant in the detached space focuses on the continental French cuisine and invites the original TRB chef to participate in the research and development of the dishes, providing each diner with quality ingredients and delicious dishes. New experiences and feelings also provide diners with a variety of dining environments and services.

NUOVO comes from Italian, meaning ‘new, brand new’, which is brand new and is an innovation and upgrade of the restaurant by the original team of Unique Italia. The restaurant invites the original TRB chef to join and develop the original Italian meal into a continental French meal.

Because of its superior geographical location and diverse climatic environment, Europe has a unique food culture and high-quality ingredients to form a variety of dishes with distinct tastes. Therefore, the continental meal is a collection of cuisines from all over Europe. Its simple cooking techniques restore the taste and aroma of the essence of the ingredients. Together with the NUOVO chef's sophisticated and appropriate combination of ingredients, which results in the restaurant’s comprehensive upgrade in its cuisine. Therefore, there is the origin of the 'Hui' in the name of the restaurant.
